Spiced Basmati Rice with Mint Yogurt

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 4 cup uncooked Hinode Basmati Rice

  • 4 Chicken Breasts (cubed)

  • 8 tbsp Vegetable Oil

  • 4 Onions (sliced)

  • 8 tsp each: Ground Coriander, Cardamom, Cumin, and Curry Powder

  • 24 cloves

  • 8 Garlic Cloves (crushed)

  • cup Chicken Stock

  • Salt and Pepper to Taste

  • 1 cup Plain Yogurt

  • 8 tsp mint sauce (thick)

Basmati

Basmati rice is renowned for its delightful aroma and long slender grains. When cooked, Basmati rice expands in length and produces a light, fluffy texture that is ideal for absorbing the flavours of your cooking. A drier rice, Basmati grains will remain separate, making it a staple of Indian cooking.

Method

  • Sauté onion and oil in skillet over medium high heat until translucent.

  • Mix in all seasoning: ground coriander, cardamom, cumin, curry powder, cloves and garlic.

  • Add chicken and brown on all sides for about 10 minutes.

  • Pour in chicken stock and bring to a boil, add rice and stir. Reduce to low, cover skillet with a tight fitting lid and simmer for 15 minutes or until moisture is absorbed and rice is fluffy.

  • Salt and pepper to taste and garnish with yogurt and mint sauce.
