Chicken Fajitas

This recipe was originally designed for 4 people. Amended serving sizes for 1, 2, 6, and 8 people are intended to serve as general guidance only. Cooking times may need to be adjusted to suit your amended serving size.
  • 4 cup Hinode Long Grain Rice

  • 2 can Kidney Beans (rinsed)

  • 4 medium tomatoes (diced)

  • 1 Red Onion (diced)

  • 2 Avocado (diced)

  • 8 tbsp Sweet Chili Sauce

  • Salt and Pepper to Taste

  • 2 lb Chicken ((approximately 2 breasts))

  • 2 tsp Paprika

  • tortillas

  • 2 head of lettuce

  • sour cream to serve

Method

  • Prepare Hinode rice per package instructions.

  • In a bowl, mix together rice, beans tomato, onion, avocado and sweet chili sauce. Season to taste with salt and pepper.

  • Season chicken with paprika, salt and pepper and grill on BBQ until cooked. Slice chicken into strips.

  • Heat tortillas according to pack directions.

  • Place lettuce on top of each tortilla, then add rice mixture and finally top with sliced chicken.

  • Dollop with sour cream, wrap and serve.
